Kithul Syrup

Kithul syrup is the concentrated form of sap extracted from the palm tree called Caryota urens L. Recent scientific investigations report that C. urens sap is nutritionally rich and contains mixture of simple sugars such as sucrose, glucose and fructose, and sugar acids. Kithul has a much lower calorie content than cane sugar and a high nutritional content: it contains reducing sugars which ensure that the syrup passes through the body rather than being stored. It is a common ingredient in Ayurvedic medicine and a good alternative sweetener for diabetics due to its low GI value.

Kithul is not only a low GI food but also rich with many health-promoting minerals and acids. It contains polyphenols which are antioxidants, organic acids which are bioactive, amino acids which have many functions, beta carotenes that cause to produce Vitamin A and ascorbic acid or Vitamin C that improves immunity.
